Here is one of my favorite salad recipes to make! I absolutely love the taste of arugula. This pairs really well with lean protein such as grilled/baked chicken or fish.
Rinse and dry arugula, place in mixing bowl.
Dice red onion and Roma tomatoes, place in bowl with arugula.
Dress salad adding extra virgin olive oil, lemon, salt and pepper. Mix to distribute ingredients evenly throughout salad. If needed add more of any ingredient little at a time until you reach your desired flavor.
Serve over lean grilled/baked chicken, steak or fish, enjoy!
